The flesh is a lovely soft pink colour. The succulent taste and texture of this lovely white fish make it perfect for soups and stews, as it seems to soak up all the lovely flavours it is cooked in.

Taste description

Very sweet in aroma with notes of freshly boiled potatoes, rays have an unusual shredded texture with long linear flakes that tear apart in the same way as a fresh mozzarella or spaghetti squash. In the mouth, the feel is soft, rich and melting with the controlled level of moisture leading to a very slight stickiness. The taste is delicate and clean.
