Crab with tarragon and pastis mayonnaise 

A lot of flavour in the mayo. Riesling Grand Cru Rosacker 2015 Domaine Mader - this vineyard is next to Clos St Hune from Trimbach. I look for gems, and this is a gem great value a wine connoisseurs nugget, not paying white burgundy prices however having a similar experience. This wine is totally organic and all the grapes hand harvested.

Now another wine you perhaps wouldn't normally choose, a White Rioja 2015 Las Planas Crianzas Real Agrado. 589 bottles produced and only 36 for the UK next vintage.
Variety: Viura
Fermentation takes place in new fine grain American and French oak casks.
Aging for 24 months in the barrels with its lees that are stirred periodically (battonage).
The barrels spend two winters outside the winery in the open air. A further 24 months maturing in the bottle before being released.
Tasting notes: pale golden colour, remarkable tears. Aniseed-flavoured, fine wood, balsamic and honey notes, glacé dried peaches. Complex flavour, peach compote, smooth and diverse sensations of Wood. Soft on the palate, expressing freshness, wide volume and unctuousness. Passing through, lingering, fine and elegant.
