Pre-heat your oven to the maximum heat setting.
Put the scallops in their shells and arrange on a baking tray. A crumpled piece of tin foil under the shells, can help to keep them steady on the tray.
Season with salt and drizzle each scallop with a teaspoon of olive oil.
Place in the oven for 5-7 minutes.
Remove from the grill and pour the Vietnamese Dressing over the scallops.
Sprinkle with some freshly chopped coriander.
Serve.
