This delicately flavoured member of the cod family hasn’t enjoyed rave reviews for its culinary performance over the years, but with our greater awareness of sustainability now is the time to give whiting a second look.
How do we prepare the fish?
We fillet and pin bone the fish ready for cooking.
Both sharp and savoury, the flavour is of full cream milk – intense at first, but very fleeting, and the texture is soft yet crumbly.
