Hot Smoked Salmon Sandwich
Spread each slice of bread with the bechamel sauce, cover with smoked salmon and sprlnkle with black pepper and lemon juice. Make 2 sandwiches and cut into 4 triangles. Mix the milk and beaten egg together in a bowl and dip the sandwiches into this mixture and fry on either side in the butter until crisp and golden.

4 slices of medium cut white bread, crusts removed
100ml bechamel sauce (you can buy this ready made from a good supermarket)
100g sliced smoked salmon
1 tbsp fresh dill, chopped
freshly ground black pepper
squeeze of lemon juice
a splash of milk
2 eggs, beaten
butter for frying
