About Cantabrian Tuna - Olive Oil
These Northern Bonito Tuna are caught individually by rod and line during a very short season that lasts just 3 weeks each year in MSC controlled waters in Northern Spain. They are then filleted by hand and tinned in olive oil.
A million miles away from your average can of tuna, this is a deeply flavoured, incredibly special fish, perfectly preserved.

Cantabrian Tuna - Olive Oil
A good Monday market to get the week going. Hake is the first thing to look at this morning and the smoked haddock from Alfred Enderby’s kiln is always worth picking up while it’s fresh. There are some lovely red mullet and black bream about too, and it’s good to see Disco scallops back on the counter.
With around 2,800 portions across 26 species there’s plenty to explore today. One of those mornings where being this close to the auction really pays off. A proper start to the week. Eat better fish.
