I once had this dish sitting on the quayside in Essaouira itself where open restaurants are barbecuing simply grilled fish with this local zingy fresh salad. The salsa type salad is open to a little change of ingredients depending on what’s around but pickled lemon, tomatoes and coriander are the key thing with a little chilli and peppers are the key ingredients and it works particularly well with barbecued fish like sardines and mackerel.

Ingredients

12 fresh sardines or more if you wish
Sea salt and freshly ground white pepper
1 medium pickled lemon, finely chopped
1 medium red or green chilli, trimmed and finely chopped
1 large tomato, cut into rough 1 cm chunks
1 long red or green pepper, trimmed halved, seeded and cut into rough 1cm dice
1tbs chopped coriander
2-3 tbs extra virgin olive oil

Method

Pre heat your Barbeque. 
Meanwhile mix all of the ingredients together and season to taste. 
Season the sardines and place them in a barbeque fish rack and grill for a minute or so on each side until nicely coloured. 
Serve with the salad spooned over.
