This dish is traditionally served with sea bass but it works equally as well with John Dory. It’s dead simple to cook and serve and will most certainly impress your dinner guests.
4 portions of John Dory
2 medium red or green chillies, thinly sliced
A piece of root ginger (40-50g), thinly sliced and shredded into matchsticks like pieces
Sea salt and freshly ground white pepper
2-3 spring onions, trimmed and thinly sliced on the angle
A small handful of coriander leaves
4 tbs mirin
Preheat the oven to 200C/185C fan/gas mark 6
Place the John Dory on a baking tray, season and scatter on the ginger and chilli and spoon over the mirin. Cover and cook in the oven for about 15 minutes or until just cooked. Transfer to serving plates, spoon the cooking liquor over and scatter on the spring onions and coriander.
