Tuscan Style Tuna Salad with Anchovy Mayo

A simple Italian style salad, made with organic white beans, seasonal tomatoes, red onion and nocellara olives! Beautiful! And served with my current new favourite dressing… anchovy mayo! To make (for 2)

 

 🐟 Start by prepping all the ingredients and make the dressing with the mayo, anchovy paste and a drizzle of the oil from the can of tuna in a small bowl. Add a little squeeze of lemon juice and mix well

.

 🐟 Then divide the salad leaves between two small plates. Sprinkle over the parsley and then layer the other ingredients on top, starting with the beans, then tomatoes, tuna, olives and the red onion

.

 🐟 Finally, drizzle with a little of the tuna oil and finish with a sprinkling of the chilli flakes and fresh chives. Serve with the anchovy mayo on the side and some lovely fresh crusty bread!
