Pan-fried Ray Wing with Capers and Black Butter
You will need (serves 2)
Olive oil
2 Skate wings
Unsalted butter
1 tsp red wine vinegar
1 tbsp capers
1 lemon
Fresh parsley
To Make
Heat the olive oil until hot. Add the skate wings, one by one, and fry until golden for about 1-2 minutes, then turn them over and repeat. Place the whole pan into a hot oven to finish cooking for 6-7 minutes. Once the wings are cooked, remove them from the pan and place onto serving plates.
Add a generous piece of butter to the pan, stir in the wine vinegar, and continue to cook until the butter starts to brown. Add the capers, squeeze in the lemon juice and finally add the chopped parsley to the pan. Pour your butter sauce over the skate and serve.
