A market that’s building nicely this morning. The wild brown trout is worth a look while it’s here, something a bit different and always good to see on the counter. Dover sole and the other flat fish, sand sole and megrim, are offering good value, and there’s some nice John Dory about too.

The diver-caught scallops are the one I’d point people towards first. Consistent, easy to cook and always a good thing to have to hand.

With around 3,200 portions on offer and the weather set to turn later in the week, it’s a good opportunity to get ahead of things while the choice is this strong. Eat better fish.
