Whiting with caper butter
Whiting is an incredibly underrated fish. Its flesh is soft, it has lovely small flakes and a very delicate flavour. Coated in breadcrumbs, fried and even with tartare sauce it can be a delight as can simply grilling a few fillets with butter and capers as in this recipe.
You will need – Serves 2
350 g whiting fillet
2 tbsp capers
Zest of a lemon
100 g soft butter
1 tbsp of finely chopped parsley
sea salt
To Make
Pre heat the grill to maximum.
In a food processor simply blitz the capers, lemon zest and parsley with the butter. Brush the fillets with this mixture and grill for 4-5 minutes. Season to taste. Serve with a simple green or tomato salad.
