I have designed this recipe to be really simple and easy to do, it works perfectly in the Dean Forge baker oven.
Ingredients
6 Scallops
Spring onions/a leek, sliced
65g bacon lardons
Double cream
Parmesan
Breadcrumbs
To serve
Salad
Potatoes
Sourdough
Method
In a small dish that can just fit the scallops and can go into straight the oven, soften a tablespoon of spring onion or leek with a small handful of bacon lardons
Pour a little water into the dish. Place 6 scallops on top, season with salt and pepper then pour double cream over the top, sprinkle with breadcrumbs and lots of grated parmesan then bake in the over for 8-10 minutes until golden and bubbling, serve with salad, potatoes or good sourdough.
