Herb-Crusted Roasted Dover Sole
Ingredients:
- 1 whole Dover Sole
- 2 tbsp cooking oil
- Salt, to taste
- 1/2 cup breadcrumbs
- 1 tsp dried oregano
- 1 tsp dried thyme
- 1 tsp dried rosemary
- Garlic Butter
Method:

Preheat the Oven: Set your oven to 180°C and allow it to preheat.

Prepare the Fish:

Lightly oil both sides of the Dover Sole using a brush or your hands.

Season generously with salt.

Prepare the Roasting Tray: Line a roasting tray with parchment paper and place the seasoned Dover Sole on top.

Make the Herb Crust:

In a bowl, combine the breadcrumbs with oregano, thyme, and rosemary. Mix thoroughly.

Evenly sprinkle the breadcrumb mixture over the Dover Sole.

Add some generous chunks of garlic butter across the top of the crumb across the length of the Dover Sole.

Roast the Fish: Place the tray in the preheated oven and roast for 8 minutes, or until the breadcrumbs are golden and the fish is cooked through.

Serve: Carefully remove the Dover Sole from the oven and transfer it to an oval serving plate. Serve immediately, either on its own or with a light salad or roasted vegetables.
