Quick fried squid with garlic, lemon and Sauce Romesco

This simple Spanish inspired squid recipe is quick to prepare, and perfect for our tender delicious Torbay Squid.
Sauce Romesco has long been one of my favourite sauces for fish, we make it in small batches with red peppers, almonds, smoked paprika, balsamic vinegar and olive oil.
Method
Slice the squid into rings or chop into chunks.
Heat the oil until really hot, add the garlic, fry for 30 seconds then add the squid and stir fry until it turns from translucent to white , this will take no more than 3-4 minutes.
Take the pan off the heat, add the lemon juice, seasoning and parsley and spoon onto plates, serve with a good spoonful of Romesco and a handful of rocket.
