Tinned Mackerel Nicoise

Ingredients

Handful of fine green beans
6 new potatoes
1 ripe plum tomato
Half a small red onion finely sliced
Handful of lettuce leaves
1 tin Rockfish mackerel & 1 tin Rockfish mussels
1 small lemon
6 sliced black olives

Method

Boil your new potatoes and put aside to cool. Blanch the green beans, then refresh them in cold water. Make a dressing using the oil from the tin of mackerel and the juice of a lemon and season with salt and pepper.

Once you have done that it is just a question of assembling the salad. Mix the beans, potatoes, red onion and lettuce, then flake the tinned mackerel over the top with some black olives and add in some of our tinned mussels to finish - you could even stick it all in a wrap.
